If you have kids, I imagine you are always looking for ways to get them to eat healthier. They love cookies and sweets and this recipe swaps out all the added sugar and flour from their cookies! This is an amazing recipe that is not only healthy and delicious but is a great way to get your kids excited about eating healthy and decorating with healthy ingredients!
Raw Lemons
Raw lemons are filled with antioxidants and cancer-fighting properties. Raw lemons are filled with vitamin C which is very beneficial for your immune system. Raw lemon juice can help fight off cold and infection, insomnia and even aids in weight loss. It also helps your body stabilize its blood sugar level even after a big meal! With such a powerful fruit its not surprising that we try to add it to every recipe!
Desiccated Coconut
Desiccated Coconut is key for the connective tissue in your body which is important to your skin, teeth, tendons and bones. Desiccated coconut is also a great way to get your copper intake for the day. The copper in desiccated coconut oil is beneficial for your brain! The copper activates enzymes in your brain which are key to your brain function (i.e. neurotransmitters).
Dates
Dates are an amazing way to substitute all the sugar from your diet. With the same kind of sweetness as sugar they can be added into smoothies and even these cookies. My kids couldn’t tell the difference! They can help relieve constipation, heart problems and even abdominal cancer. Dates are also a great way to help you feel full. They subside your hunger with all of their nutrients and that translates to your body being full.

Raw Lemon & Ginger(bread) men
Serves: 3-4 (depending on how many you want to eat!)
Prep time: 10 minutes
Freezing time: 30 minutes
Ingredients:
- 1 cup dates
- ½ cup desiccated coconut
- ½ cup almonds
- 1 tsp ground ginger
- 1 tsp lemon zest
- 1 tsp fresh lemon juice
- 1 tsp water
- Dried fruit, nuts and seeds to decorate!
Instructions:
- Add all ingredients into a food processor and process until the mixture sticks together and well combined.
- Take 2 tbsp of mixture and squish into cookie cutters.
- Put into the freezer for approximately ½ hour to set.
- Pull out of the freezer and decorate with dried fruit, nuts and seeds by pressing a pattern into the gingerbread men.
