For those of us who don’t eat eggs but miss eating deviled eggs (or having them on salads, etc.) and don’t want to take the time to make a Vegan version, good news! A vegan egg has been created by some Italian food science students and it tastes like the real thing (one of the students grew up on a farm and understood how important the texture and taste was).

The “V-egg-ie” looks like the real thing and even has a yellow yolk but it’s never been anywhere near a chicken! Instead, it’s made from a “base of proteins extracted from unspecified legumes – possibly soya beans – plus vegetable oils, a gelling agent and a type of salt which mimics the taste of an egg.” 1

And it’s not just suitable for vegans but for those who don’t want all the artery-clogging cholesterol found in real eggs.

“The team of four behind the V-egg-ie are coming to the end of a Principles of Food Formulation Course, part of a master’s degree in science and food technology at Udine University. Group spokesman Francesca Zuccolo said they spent 18 months of trial and error before achieving the correct consistency, shape, and flavor.” 1

The students have patented their egg and are in talks with major food companies all over the world on how to bring it to the masses. And with the rise of veganism and vegetarianism, their timing couldn’t be more perfect!

While the exact recipe and process is a secret, Miss Zuccolo said:

“The egg is made from a base of legumes, from which we have extracted proteins, vegetable oils, a gelling agent and a special salt that also serves to ensure a taste that is similar to that of a hen egg.

It can be sold in organic, vegetarian and vegan groceries, but also in any supermarket, given the increasing demand for such products by consumers.” 1

Lead professor of the course, Monica Anese, is so excited about the ‘egg’ because she’s been asking her students to imagine and create a new food product that doesn’t exist on the market for years!
