Ingredients
- 3 cups Coconut milk (I like full fat in the can)
- 1/2 tsp finely grated lemon zest
- 1/2 cup fresh lemon juice
- 1/4 medium avocado, peeled and pitted
- 1 tsp finely chopped fresh rosemary
- 3 cups frozen pineapple
Preparation
- Pour in coconut milk, lemon zest, lemon juice, avocado, rosemary and 1 1/2 cups frozen pineapple into the blender. Process on high for about 30 seconds or until smooth.
- Add remaining frozen pineapple and process for 30 seconds until smooth and creamy.
