Organic banana protein bread
So many people have been asking for a healthier bread. Especially a healthier banana bread! So here it is by popular demand!
All Organic Ingredients:
– 2 bananas, better if ripen
– 2 scoops of Vanilla protein powder
– 1 3/4 cups coconut flour
– 1/2 cup coconut sugar
– 1/2 cup applesauce (substituting the butter)
– 1/2 an avocado
– 1 teaspoon baking powder
– 1 tablespoon vanilla
– 1 teaspoon Himalayan salt
– 1 tablespoon chopped walnuts to garnish
– 1 Tsp Coconut Oil for coating the pan
Preparation:
1. Preheat oven to 350°F.
2. Lightly spread coconut oil on a medium loaf pan.
3. In a food processor, combine the bananas, the coconut sugar and flour, the protein, the applesauce, baking powder, vanilla and salt, and process at low speed.
Note: It’s a very thick dough so I had to take the mixture out of the vitamix and pour it in a bowl and use my hands to mix it all! Then I put it back in the vitamix to keep mixing at low speeds.
4. After you get a dough-like consistency add the mixture to the greased pan, and sprinkle with chopped walnuts.
5. Bake for 50 to 60 minutes or use the old knife technique.
6. Let it cool for about 10 minutes, and then Buen Provecho!
