It’s time to don those beautiful fall sweaters, make a fire and what else? Indulge in some home made delicious Pumpkin Pie. If you give me that and a good book? I’m set for the weekend (I long for a relaxing weekend where I can do that- I’m so ready)  Autumn is our favorite time of year.  Maybe it’s because it’s when I was born, or just the change in the air and all the beautiful fall colors.  So here’s a pumpkin pie to match. Enjoy, make it with someone you love. Oh and enjoy it with someone you love too! We’re going to find the time to make one this weekend and devour it!

Vegan Pumpkin Pie with Pecan Date Crust

(all organic ingredients please)

Pecan Date Crust

Ingredients: 1¼ cups old fashioned rolled oats (not quick cooking) ½ cup pecans 1/4 tsp salt 6 pitted Medjool dates 1½ tablespoons unsweetened almond milk (any non dairy milk will work)

Instructions: Preheat oven to 375. Place the oats, pecans and salt in a food processor and blend until ground, about 40 seconds. Add the dates and blend until mixtures starts to clump together. Add almond milk and blend until combined. Press crust into a 9″ pie plate. Bake for 5 minutes. Remove from oven. Reduce heat to 350.

Pie Filling:

Ingredients: 2 1/4 cup pureed pumpkin 1/2 cup brown sugar or sucanat 1/4 cup unsweetened almond milk 1 TBSP softened vegan butter, such as Earth Balance 1/4 cup maple syrup 3 TBSP arrowroot powder (or cornstarch) 2 tsp vanilla extract 2 tsp cinnamon 1/2 tsp ground ginger 1/4 tsp nutmeg pinch of ground cloves 1/2 tsp salt

Instructions: Preheat oven to 350. In a small bowl, combine almond milk and arrowroot. Stir until disolved. In a mixing bowl, combine all ingredients. Stir in arrowroot mixture. Pour filling into prepared crust and bake for 45 minutes. Cover edges of crust with foil and bake for another 15 minutes. Allow pie to cool, then refrigerate for at least 4 hrs before serving.
