We are honored to have an original recipe from the beautiful and talented Rochelle Vincente Von K! She’s a vocalist, musician, chef and chocolate maker extraordinaire (her chocolate was served at the Oscars this year!) Here goes.
Soft Cheezy Kelp Noodles
Thai Style!
Part 1
Take one packet of Kelp Noodles – use plain (not the green tea, which gives an odd bitterness .. if that’s all you have then add extra coconut sugar to counteract) and soak them in salty water for one hour.
Take 2 cups cashews (presoaked for 20 minutes) 1 whole lemon (rind removed) 1 handful of fresh coriander, 1 sq inch fresh ginger, 1 sq cm fresh turmeric (or curry powder also works very well) 1 – 2 tbsp coconut sugar, 1 tsp onion powder, Sea salt to taste (I add a lot, love my salt)
Take 1 dash of coconut aminos Pinch of cayenne pepper, Pinch of nutritional yeast (a lot works too!) 1 cup spring / filtered water Whatever else tickles your fancy spice wise.. cumin, dried garlic etc is great…
Place all ingredients in blender and buzz
Taste and add anything extra
Consistency is much runnier than a nut cheese, but not milky .. if it’s too thick add extra water and buzz again
Part 2
Pour into glass bowl
Cut handful of fresh broccoli Cut handful of fresh mushrooms (any type)
Place in cheesy mixture
Part 3
Add in your thoroughly soaked kelp noodles
Massage everything together so that the noodles are under the surface of the mixture
Pop in dehydrator at 105 for 1 hour – or anywhere between 1 – 3 hours
Stir every once in awhile (not essential)
Remove and sprinkle with black sesame seeds & freshly cut coriander
Also really nice to mix in with some salad … or place on a bed of salad
Serves 2, or 1 if you are super hungry!
